Tur is the backbone of a Marathwada kitchen, and it is the crop we grow most of. Ours is sown after the first proper rain and harvested dry, the way it has always been done here.
What you buy has not been polished, oiled or coloured. Polished dal looks brighter on a shelf; it also loses the outer layer where much of the goodness sits. Ours looks like what it is — dal that came out of a pod.
It takes a little longer to cook than the polished kind. The varan tastes of something, which is the whole point.
